St. Patricks Day themed Cupcakes

Hello all!

Welcome to another lovely day for blogging! Today I am sharing my photos of my friend Kelsey making cupcakes! These cupcakes are St. Patrick’s Day themed for march! Along with the photos will be a recipe for her delicious Lime cream cheese icing! First I must start by mentioning just how adorable Kelsey was when I showed up at her house. She was ready to bake with her vintage apron! So, here we go!
Kelsey’s Vanilla St.Patricks day cupcakes with Lime Cream Cheese Icing

First we will start with base: The Cupcake itself.

Vanilla Cake:
1 Box white cake mix
1/3 cup oil
4 egg whites
3/4 cup buttermilk
3/4 cup sour cream
2 teaspoons vanilla extract
green food coloring

1. Preheat oven to 350 degrees and line pan with cupcake liners.
2. In a large bowl, gently combine oil, egg whites, buttermilk, sour cream and vanilla extract.
3. Sift in cake mix and stir.
4. Separate batter in to 2 halves. Add green food coloring to one of the halves.
5. Fill cupcake liners 1/2 full with the white cake mix. Then add green cake mix until liners are ¾ full and marble the two colors together with a toothpick or fork.
6. Bake for 17-22 minutes, or until and inserted knife comes out clean.

Lime Cream Cheese Frosting:
1 cup Butter
½ package of cream cheese (1/2 cup)
Icing sugar to taste
2 3.7ml bottles of Lime oil
green food coloring

1. Add butter and cream cheese together. Beat until combined.
2. Add icing sugar until desired consistency and taste are reached
3. Add lime oil and food coloring. Beat until desired consistency and color.
4. Pipe on to cupcakes once they are cool. (Kelsey used a Wilton 1M tip)

So there you have it! Delicious cupcakes in time for St.Patricks Day. I can definitely verify the deliciousness of these cupcakes. Don’t like lime flavoring? You can buy different oils for different flavors. Just make sure the bottle reads “Edible” or “for ingestion”. If you can’t find any local oils, I recommend DoTerra oils. Therapeutic grade oils that are good for your health and safe to ingest in a variety of flavors.
